Michelin chef Marc Wilkinsonback to roots

WIRRAL’S only Michelin- starred chef has turned his talents to promoting the fruit of Anglesey’s rich food heritage.

Marc Wilkinson, who spent a large portion of his youth on the Welsh island, took time out from his busy schedule at Fraiche in Oxton to return to his roots and help launch a new brochure encouraging people to visit.

Marc is the only chef in Merseyside with a Michelin star.

It was on Anglesey that Marc first discovered his love of great food and experimenting with ingredients. Marc also has fond memories of cockling on the island, he said: “Red Wharf Bay was great for cockling, I used to bring cockles home and we’d cook them, so from a young age I always loved to go and find the freshest ingredients which Anglesey is great for.”

Marc now lives in Oxton and owns the acclaimed Fraiche restaurant, which specialises in modern French cooking with a fresh twist.

And despite leaning towards Gallic cuisine, he’s not afraid to talk up the quality available in his home regions, including Welsh Black Beef, Guinea Fowl, and an abundance of freshly caught fish.
