WIRRAL Chefs Shine reached the halfway stage last week with our third finalist Dave Williams stepping up to the plate.

The 21-year-old head chef served up a treat at The Portrait House in Hoylake with a locally-sourced menu including duck, cauliflower and tomato tempura fritters and Chantenay carrots.

Diners reserved particular praise for the “mouth-watering” main course of honey-glazed Gressingham duck breast.

Those with a sweet tooth also singled out the generous portions of vanilla and mascarpone torte served up for dessert, accompanied by a strawberry and blueberry compote and Chantilly cream.

Tracy and Gary Bradshaw, from Newton, were dining with Donna, Paul and Joshua Meadows from West Kirby.

Tracy said: “It was delicious, it really was an excellent meal. We’ve enjoyed it and the service has been really good all night.

“The duck was gorgeous.”

A tired but happy Dave told the News at the end of the evening: “The last two days have been manic, getting ready for tonight.

“This morning I came in early just to get it done but tonight has been great.

“I’d definitely do it again and I just hope everyone who came tonight enjoyed it.”
